- For Stuffing:-
- 1 tbsp oil
- 1 green chilli finely chopped
- 1 medium size potato, boiled and mashed
- 1/4 cup green peas
- as required coriander leaves
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp kasmiri red chili powder
- 1/4 tsp cumin powder
- 1/4 tsp coriander powder
- Pinch hing
- As per taste Salt
- For Bati:-
- 2 cup wheat flour (atta)
- 1/2 cup semolina
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 cup ghee
- 1/4 tsp ajwain
- as required Water
- For Churma:-
- 1 tbsp ghee
- 4 tbsp powder sugar
- 3 bati
- 2 tbsp chopped cashew nuts and almonds, raisin
- 1/4 tsp cardamom powder
- For Dal :-
- 1/2 cup moong dal
- 1/4 cup massor dal
- 1/4 cup chana dal
- 1/4 cup white urad daal
- 3 tbsp ghee
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 onion finely chopped
- 1 tsp ginger paste
- 1 tomato finely chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- Pinch hing
- as per taste Salt
- as required Chopped coriander leaves
Instructions to make to make Rajasthani Dal-stuffed Bati Churma
- Stuffing for masala Bati :- Heat a pan with oil add cumin seeds. When crackle the seeds add green chillies and chopped ginger and saute for 1 min. Add mashed potato and green peas. Mix well. Now add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix everything well and cook for few seconds on medium flame. Add coriander leaves and mix well. Turn off the flame and transfer masala on a plate and let it cool completely.
- Net step is to make the Dal. Rinse the daal well and pressure cook for 5 whistle along with pinch of salt and turmeric powder and 3 cup water. Once pressure release, mash it well and set aside.
- In a pan heat ghee, add cumin seeds mustard seeds and pinch of hing. Then add chopped onion and green chillies and ginger paste. Cook it for 2-3 minutes. Then add tomatoes along with red chili powder turmeric powder and salt. Saute for few minutes until tomato becomes soft.
- Now add mashed dal and mix well. Let the dal boil for 5 minutes.add little water. Finally garnish with chopped coriander leaves and keep it aside.
- Now make bati. In a mixing bowl add all ingredients for making bati. Mix well and knead it together to form a stiff dough.
- Divide the dough into small balls and keep them aside. Now flatten the bati and stuff the potato mixture and rolled it. Prepare all batis likewise. Make 3 batis with out Stuffing for making churma.
- Preheat oven on 200 degree. Brush the all bati with ghee. Place the rolled bati on baking tray and bake for 10 minutes. Then flip over the bati and brush with ghee and further bake other side for 10 minutes. Now bati is cooked from all sides.
- Dip the bati in ghee and soak for 5 minutes. Finally bati is ready.
- Now make sweet churma. Firstly take 3 prepared with out Stuffing bati and brak into mixing grinder. Make coarse powder of bati.
- Heat tawa with 1 tbsp ghee and roast powdered bati on low flame till turns golden and aromatic. Cool the mixture completely.
- Further add 4 tbsp powder sugar, chopped cashew nuts almonds and raisin and cardamom powder. Mix well. Finally churma is ready.
- Your delicious treat is ready!! Serve with green chillies lemon slices, onion slices and deshi ghee !!☺️
